Sprinkle Pancakes (Happy colors in every bite!)

Alternate post title: "In case you weren't already subjected to this whole thing on Instagram"


Confession: I made breakfast twice this morning.  The first attempt was a major disgusting flop.  I made the egg white omelet I make for myself every morning, but I made the mistake of making Olivia's eggs first and the pan was hotter than it usually is when I cook my omelet.  The result was an egg white omelet that was a little over-cooked on the outside and repulsingly undercooked on the inside.  Icky icky icky.  Runny egg yolks are one thing, runny egg whites are quite another.  I spit out the bites in my mouth, abstained from hurling, and dumped the rest of the omelet.  Boo.  Goodbye breakfast.  Luckily I still had my fresh berries and toast to enjoy, but it wasn't quite enough to fill me.

When we got back from our walk I decided to go for round two: pancakes.  Mostly to bribe Olivia into eating some, I decided to add some sprinkles.  The result was, well, quite cheerful.  :)

Make up your favorite pancake batter.



Add sprinkles.

I really like this kind of sprinkles.  Not that it has to be this brand, but I feel like these sprinkles (like the kind you find on doughnuts and ice cream) hold their shape and color better and don't bleed as much as the little round sprinkles.  Look for it next to the ice cream toppings.



Cook 'em up.

It kind of made me super happy to see all those bright little colors every time I took a bite.  :)

And in case you're wondering, they didn't really have a weird texture.  There was maybe a slight difference, but it wasn't bad.  It kind of just made it seem like I was eating a cupcake.  :)  Oh, and Olivia liked them too.  Hooray for happy rainbow sprinkle pancakes!

Love this! So simple and so fun for kids. I add a little bit of sprinkles to the top of yogurt or apple sauce and the kids just love it : ) I think I might make the kids sprinkle pancakes for lunch today : )

I make these for me kids' birthdays. They absolutely LOVE them! Occasionally, I can be bribed to make them on a regular, ordinary day. ;o)
